This week meet Austin! This is Austin’s first season at Rootbound Farm. Since joining our team this past winter, Austin has done a little bit of everything including animal chores in the sleeting rain and snow, harvesting veggies on the production team, and working in the pack shed. Originally from Danville, Kentucky, Austin got interested in farming when they started paying more close attention to the food they were eating and the impacts of good food on their body. Austin’s interest in good food and their passion for being outdoors and growing things led Austin to work on farms in Mexico and then back here to Louisville to work at Common Earth Gardens supporting refugee farmers and urban growers. Austin’s favorite vegetable we grow is tomatoes and their favorite crop to harvest is strawberries.

- Roasted Cherry Tomatoes
- Sautéed Green Beans with Garlic
- Grilled Zucchini or Squash Caprese Sandwiches
- Refreshing Fennel Tea: remove the fronds from the fennel, boil them in water for at least 10 minutes, drain out the fennel fronds and add honey if desired. Serve chilled or hot.
