Recipe Recap – Week 21

“Is that a pumpkin, Mommy?” My toddler asked as we opened our CSA this week. It never ceases to amaze me, what I continue to learn from our CSA with Rootbound. At ages 36, and 3, my son and I learned about the kabocha squash. It has a delicious, rich flesh that is perfect for roasting, or adding to hearty soups. They are also the most pumpkin-looking squash, so we couldn’t resist decorating with them first, and then eating them later. This week’s recipes below, and the picture above was styled with help from said toddler.

Simple Roasted Kabocha Squash
Kabocha Coconut Curry  (can also be made with acorn or butternut squash
Roasted Watermelon Radishes with Goat Cheese
Roasted Root Vegetables (celeriac, beets, potatoes, sweet potatoes…)
