Celeriac! The ugliest veggie of all? Celery root (a.k.a. celeriac) is a knobby, bulbous root vegetable, its distinctive flavor—think celery meets parsley—is too good to ignore. Don’t let its looks deceive you, the recipe possibilities for celeriac are immense. It can be sliced and used as noodles, cooked in stews, or made into fritters, to name a few. I even found a celeriac schnitzel recipe that looks very tasty!
