Recipe Recap – Week 14

Did you have any idea that okra had such gorgeous flowers? I did not until I saw them for myself at Rootbound Farm. These large, yellow flowers invite you to come in for a closer look, as they sway above the tall crops. There are numerous reasons I love my Rootbound CSA, and one is the opportunity to educate myself more on the vegetables we consume.

Spending the majority of my time in the South meant I only knew Okra as a fried food. It is so much more than you might expect. Okra is a nutritious vegetable, with many health benefits, and it is high in fiber. Okra is often found in stews or gumbo, and can even be used as a thickener for sauces. It can be pickled, fried, or used in a sauté. How will you use okra this week?

Roasted Purple Potatoes with Lemon Dijon and Thyme
Oven Roasted Okra
Cajun Corn Maque Choux (with corn, peppers, tomatoes, okra)
Eggplant Parmesan (be sure to add basil!)
Baba Ganoush (Eggplant dip)
Roasted Delicata Squash
Blistered Shishito Peppers
