How to: Lamb (or Kofta) Meatballs

When I think of meatballs, I think Italian food. Meatballs on top of a mound of spaghetti and marinara sauce. Delicious! But there are more ways to enjoy meatballs than just with spaghetti. Middle Eastern, and Mediterranean dishes often call for meatballs, and Rootbound ground lamb is perfect such recipes. Today we’re featuring a recipe for Middle Eastern Kofta Balls.

Kofta is simple to prepare. This recipe makes roughly 28 balls, so you can store some in your fridge or freezer for later. Koftas are a good addition to any salad, or even a kid’s lunch for some extra protein. Pair with hummus or tzatzki sauce for dipping for an afternoon snack. For this dinner, however, we served the kofta with roasted butternut squash, tomatoes, green onions, rice, roasted chickpeas, hummus, and naan bread.
